Apple Cake
Serves 8
1 cup plus 1 teaspoon canola oil
6 apples, peeled and cut into small chunks
1 Tbsp lemon juice
1 tsp cinnamon
1⁄4 tsp. allspice
2 1⁄2 tsp. vanilla extract
2 cups brown sugar
4 eggs
1⁄2 cup orange juice
1 tsp. salt
3 cups all-purpose flour
Preheat the oven to 350 degrees. Lightly grease a baking pan with 1 teaspoon canola oil.
Put the apples into a large bowl and sprinkle them with lemon juice, cinnamon, allspice, and vanilla, and mix together. Set aside.
In a separate bowl, beat the sugar and eggs (adding one egg at a time) until blended. Add oil, orange juice, salt, and flour to this batter.
Pour alternating layers of the batter and apple mixture into the baking dish. Bake for 50-60 minutes, until the cake is a golden color.
